Classic Cream Scone
Directions
- 2 cups flour
- ¼ cup sugar
- 2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/3 cup unsalted butter
- ½ cup cream
- 1 egg
- 1 ½ teaspoon vanillaPreheat oven to 425
- Sift together flour, baking powder, sugar and salt.
- Cut butter into into the above ingredients using a pastry blender or 2 knives until the size of small peas.
- Beat eggs in a separate bowl.
- Reserve 2 tbsp. of this mixture.
- Add to the remainder and beat in cup cream.
- Make a well in the dry ingredients. Pour the liquid into it.
- Combine with a few swift strokes. Handle the dough as little as possible.
- Place it on a lightly floured board. Pat until ¾ inch thick. Cut with a knife into diamond shapes. Brush with whipping cream.
