Chocolate Chip Muffins
- 1/2 cup sugar
- 5 tablespoons butter
- 1 egg
- 1/4 cup milk
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2/3 cup miniature semisweet chocolate chips
In large bowl, cream sugar and butter. Add egg, milk and vanilla mixing well. Stir in chocolate chips. Combine dry ingredients together and then add them to the wet and mix gently. Spray a mini muffin tin or line with paper/aluminum foil cups. Spoon a well rounded tablespoon of batter into each mini-muffin cup. Bake at 375 degrees for 15 minutes or until muffin batter does not adhere to a toothpick inserted in the center of the muffin. Cool in pan for a few minutes before removing. Makes about 24 muffins.
