Baked Apples

Directions

    • 2 cups mixture of dried cranberries and raisins
    • 1-1/4 cup coarsely chopped walnuts (optional)
    • 1/2-2/3 cup packed brown sugar (see note below)
    • 1 cup water
    • 2 teaspoons ground cinnamon
    • 6 apples, cored and chopped (you can use any variety)

    Combine all ingredients in a large microwave-safe dish.  Microwave at high 20 minutes or until apples are soft, stirring occasionally.  Serve warm with a pitcher of cream on the side.

    Yield:  6 cups (serving size 1/4 cup)

    Notes:  The original recipe (Cooking Light website) calls for 1 cup brown sugar.  I use 1/2 to 2/3 cup, depending on what type of apples I am using.  For instance, all granny smith apples would use 2/3 cup because it is a tart apple.  That recipe also called for all dried cranberries but I like to mix cranberries, golden raisins and regular raisins.
